Blackened Snakehead Tacos with Lime Slaw

Snakehead's firm texture makes it a taco superstar — it won't fall apart in the pan the way flakier fish do. Blackening takes about four minutes.

Blackening seasoning

Mix paprika, cayenne, garlic powder, onion powder, dried thyme, oregano, black pepper and salt.

Lime slaw

Toss shredded cabbage with lime juice, a spoon of mayo or Greek yogurt, cilantro, salt and a pinch of sugar.

Method

  1. Coat snakehead fillets in the seasoning.
  2. Get a cast-iron skillet screaming hot with a little oil.
  3. Sear fillets 2 minutes per side until blackened and cooked to 145°F.
  4. Flake into warm tortillas, top with lime slaw, avocado and a squeeze of lime.
