Crispy Fried Snakehead — The Chesapeake Classic
Here's the secret nobody tells you about the frankenfish: it's one of the best-eating freshwater fish you'll ever have. The flesh is firm, white, and mild — closer to grouper or snapper than to catfish. Harvesting snakehead is legal (and encouraged) where they're invasive, so put them on the plate.
Ingredients
- 2 lb snakehead fillets, skinned and cut into strips
- 1 cup all-purpose flour
- 1 cup cornmeal or fish fry mix
- 2 eggs + splash of milk
- Salt, pepper, paprika, garlic powder, cayenne
- Oil for frying (peanut or canola)
- Lemon wedges & hot sauce to serve
Method
- Pat fillets dry and season with salt and pepper.
- Set up a dredge: seasoned flour → egg wash → cornmeal/fish fry.
- Heat oil to 350°F.
- Fry strips 3–4 minutes until golden and floating; internal temp 145°F.
- Drain on a rack, hit with salt, and serve with lemon and hot sauce.
Tip: Snakehead fillets have a Y-bone line similar to a bass; trim the rib bones and pull the pin bones for a boneless fillet. Only keep and eat fish from waters where it's legal, and follow any local consumption advisories.
